Azienda Agricola San Fedinando is located in the beautiful Val di Chiana area, where the tradition of oil and wine production has been alive and well for centuries. The ampelographic heritage of San Ferdinando includes native varieties such as Ciliegiolo, Sangiovese, Pugnitello and Vermentino.
Obtaining the highest quality grapes is achieved through careful vineyard management. Almost all operations in the vineyard are carried out manually. Operations that are part of the vine production cycle are carried out with a tremendous amount of respect for the environment and nature. The use of herbicides and insecticides is forbidden, while the use of grass sowing, green manure and mowing is very frequent. The grapes are harvested manually, in small crates, after summer thinning in several stages, and careful selection of the grapes. The cellar is only a few steps away from the vineyard, and within a few minutes all of the crates are delivered. Then the grapes undergo a careful selection in order to bring the best ones to the cellar.
The winery is divided into three areas: the vinification area, consisting of conical vats and steel tanks, used for both fermentation and ageing. This area is connected to the barrel room, consisting of large barrels and French oak tonneaux, where the wines complete their maturation. Bottle ageing takes place in the third area of the cellar adjacent to the barrel room.
