This family business started at the beginning of the 1900s on the hills between Cortona and Montepulciano. Since ancient times these hills had the calling to be producers of the highest quality grapes. The family today cultivates about 10 hectares of vineyards with high-density planting (about 5200 vines/hectare) and the main method of cultivation is the spurred cordon. The varieties are Syrah, which is the grape variety at the basis of the Cortona D.O.C. denomination, Merlot, Cabernet Sauvignon and Sangiovese. Recently, white grape varieties such as Chardonnay and Viognier have also been planted.
The cultivation methods aim at having complete respect for the environment and maintaining the natural balance between the plant, the soil and microorganisms, leading to the optimisation and elevation of all the organoleptic characteristics of the grapes. Such use is facilitated by the fact that all the vineyards are surrounded, as if in an embrace, by woods that create a unique microclimate, assisting in the spread and reproduction of beneficial insects.
What distinguishes the quality of the grapes is their meticulous selection: out of the 10 hectares of vineyards, only the best 2 hectares are chosen for vinification. Grapes are thinned out at veraison and then further sorting is done during manual harvesting in the crates. Finally, after destemming, the grapes are sorted by hand on a sorting table. All other grapes are destined for sale.
Fermentation, which lasts between 20 and 35 days depending on the grapes and the vintage, takes place in temperature-controlled steel vats. The must never exceeds a temperature of 27°C, in order to keep all the aromas and fragrances intact. After this period of time, the wines are separated from the marc by means of a very soft crushing. Following the racking process, the new wines are sent to age in barriques or cement tanks, where they remain for about a year. The barriques are all made of French oak and they are used for 5 years. This allows us to make wines that fully respect the pedoclimatic characteristics of the vintage. Our wines are known for their elegant and clean style, clear but never aggressive aromas, and roundness in the mouth provided by soft but firm tannins.
