Cantina Fregnan is located at an altitude of 380 metres above sea level, nestled in the hills surrounding Poppi. The fresh, deep soils are rich in limestone and clay. This makes for a good water reserve for the normal ripening of the grapes and provides the necessary minerals for their savouriness. The climate of the Casentino is typically Apennine, with heavily continental characteristics and high temperature swings, both diurnal and annual. This is the ideal spot for growing high quality vines.
The winery’s flagship wine is “Il Patriota”, a Brut Metodo Classico sparkling wine. It is a wine derived from a blend of Chardonnay (70%) and Pinot Noir (30%). It matures for 24 months on the lees and is put on the market about three years after the harvest. The wine has fine, creamy bubbles, with aromas such as citrus, mint and a hint of tropical fruit. The bouquet is complemented by light notes of ripeness, toasted dried fruit and traces of wax. On the palate, it is taut and broad, yet light, with a distinct savoury sensation that makes it particularly pleasant.
The producer’s other wine is a sparkling rosé Extra Brut Metodo Classico, made of 70% Pinot Noir and 30% Chardonnay. The short soaking of the pinot noir skins (about 10 hours) takes place at controlled temperatures. Fermentation is spontaneous and maturation lasts between 6 and 9 months in steel on fine lees, giving structure to the sparkling wine base. Maturation continues for at least 24 months on the lees after re-fermentation in the bottle, reaching a total of 48 months.
